Our signature Ganache recipe used through all our Macarons. You can also use this ganache in between layers of cakes, on top of cupcakes or as decorations, etc.
1. Melt the chocolate: heat water in a saucepan, then put the chocolate in a heat proof bowl and pop it on top of the saucepan. Stir as it gently melts. Set aside.
2. Mix the vegan cream and maple syrup together in a saucepan.
3. Pour the mixture over the melted chocolate.
Using a stick blender, blend the ingredients together and start adding the butter/oil whilst blending.
4. Blend until smooth and shiny. Let it set outside or in the fridge, depending on what you’d like to use it for, e.g.
at least an hour in the fridge before piping.

20g maple syrup
90g dark chocolate (70%+)
20g vegan butter / coconut oil
